Ricotta & spinach pasta

Soft small pasta in a creamy ricotta, spinach and tomato sauce.
Ingredients
- Pasta — 3/4 cup (small shapes)
- Ricotta — 1/4 cup
- Spinach — 1 cup (finely chopped)
- Tomato — 1 small (peeled, deseeded)
Method
- Boil the pasta for about 12 minutes until very soft.
- Wilt the spinach with the tomato in a pan for about 4 minutes.
- Stir the ricotta through to make a creamy sauce.
- Mix with the pasta, cool and cut into small pieces.
