Lamb & pumpkin couscous

Iron-rich lamb mince with soft pumpkin and couscous.

Method

  1. Cook the lamb mince in a little water for about 10 minutes until cooked through, breaking it up finely.
  2. Steam the pumpkin for about 12 minutes until very soft.
  3. Cover the couscous with 1/3 cup boiling water for 5 minutes, then fluff.
  4. Combine everything with the turmeric and mash lightly to a soft lumpy texture.
