Lamb & pumpkin couscous

Iron-rich lamb mince with soft pumpkin and couscous.
Ingredients
- Lamb — 100g (lean mince)
- Pumpkin — 150g (peeled, diced)
- Couscous — 1/3 cup dry
- Turmeric — 1 small pinch
Method
- Cook the lamb mince in a little water for about 10 minutes until cooked through, breaking it up finely.
- Steam the pumpkin for about 12 minutes until very soft.
- Cover the couscous with 1/3 cup boiling water for 5 minutes, then fluff.
- Combine everything with the turmeric and mash lightly to a soft lumpy texture.
