Tofu & vegetable mash

Soft plant-protein dinner mash of tofu, sweet potato and broccoli.
Ingredients
- Tofu — 100g firm (diced)
- Sweet potato — 1 small (~150g) (peeled, diced)
- Broccoli — 1 cup florets (~80g)
Method
- Steam the sweet potato and broccoli for about 12 minutes until very soft.
- Steam the tofu for about 5 minutes.
- Mash everything together until smooth.
- Loosen with a little water to the right texture.
