Pumpkin & red lentil puree

Iron-rich smooth dinner puree of pumpkin and red lentils.
Ingredients
- Pumpkin — 200g (peeled, diced)
- Red lentils — 1/3 cup dry (rinsed)
- Turmeric — 1 small pinch
- Olive oil — 1 tsp
Method
- Rinse the lentils and simmer in 1 cup water for about 15 minutes until very soft.
- Steam the pumpkin for about 12 minutes until very soft.
- Blend together with the turmeric until smooth.
- Stir in the olive oil and cool to just warm.
